If I'm using two of these to get a signal out to a remote building on my property, can the far end device be set up to also act as an AP for clients?

No. The far-end device will be in STATION mode and will not generate a signal you can connect to. For that matter the near-end device in AP mode will not generate a signal you can use. Ubiquiti's AC gear uses a proprietary encoding scheme and is not "wifi" compatible, even though you can see the transmissions with a scanning app.

I'm trying to extend internet to a barn, about 100 yards away. i need 2 of these (point-to-point)? then a standard wifi ap at the remote location?

Answering the second question here, about the 270yd distance: these work even at a distance of 15km. You just need to have no obstructions between the two units (trees, buildings, signs) blocking their line-of-sight.

Can I use 1 of these on my boat to pick up various land base wireless networks?

No you can’t. Unless you have a designated access point your connected to. “Various land base networks” would not work.
