Is this sturdy enough to slice a tomato?

As long as the tomato isn't soft it should. I've used the smaller egg slicer successfully with cherry and small Roma tomatoes, so this should work just as well on thin skinned tomatoes. If the tomato is thick skinned it will more likely smash the tomato and forcing the cut wouldn't be a good idea. If you're skinning the larger thick skinned tomatoes first then this will definitely cut through.

will if cut boiled potatoes/beets/carrots?

They would have to be extremely soft. I couldn't cut kielbasa sausage (which is pretty soft) with it because it couldn't get through the skin. As I applied more downward force, instead of cutting through the skin, the metal cutting piece popped off the plastic part. It was easy enough to put back, but whatever you do cut will need to be very soft.

Will this slicer work on hot dogs?

I would think that it would, although the hot dog may extend beyond the cutting wires. I love it for slicing SPAM though!
