I have good aluminum bake sheets. They are fine for cookies, toasting crouton, and other such activities, but, for anything that is the least messy - baked chicken, roasted vegetables, traybakes, and the like - where food and oil can adhere to the pan - they are a real pain! Grease adheres firmly in brown patches and they must be hand scrubbed as they cannot go in the dishwasher - or lined with foil. So I have dreamed of dish-washable, stainless steel for some years. Recently, I have been doing far more oven-roasted meals - so quick and easy to throw together, but a pain to clean up after - so I have been burning through boxes of aluminum foil to line the pans. Once in a while, that's ok, but a couple of times a week? Now I'm destroying the planet ๐ฅน. Time to get serious. After researching stainless steel, these tri-ply pans seemed the way to go. The aluminum core is key to even, quick heating, and the stainless steel outer layers mean that it can go in the dishwasher! Plus, Hestan is the only company that I have found who makes their tri-ply with sealed edges. If you have been following the American company's law suit about sharp edges, these pans will never have that problem no matter how often you run them through the dish washer. You can't see the layers on the edges, because they are sealed over with stainless steel - a more expensive manufacturing process - but no exposed aluminum to be leached away! Best of BOTH! Having received them, I wish I had bought them years ago. These Hestan pans are works of art! The surface is beautifully polished, and the edges are wonderfully smooth. They are not rolled, as they are heavy enough gauge that they do not need the little steel wire (that is within those rolled edges) to keep them from bending and warping - so no water trapped in dark crevices. They are lovely enough to use as serving trays in addition to baking on them, so, now? Dinner comes out of the oven and straight to the table!๐. They are heavier than aluminum pans, so a bit more exertion by the end of the day if you are doing a major amount of holiday cookies/bake sale inventory, but they also don't warp even in a 550F oven! And guess what? The polished stainless steel cleans like a dream! So, even though they CAN go in the dishwasher, it is sometimes easier just to fill them with water & a drop of soap, soak a few minutes, and they easily wipe clean! No hours of scrubbing baked on grease. Even if you burn it (yep, been there) a bit of a soak and a blue plastic scrubby, and off it comes, leaving the beautiful mirror surface. Heaven! Just a word of caution, they do scratch with steel wool or even the green scrubbers - I am not a metal engineer, but, my understanding is that steel that has the right mix of metals (enough iron) so that they are magnetic and will work with induction results in a slightly softer metal, which may scratch more easily, so if you want them to stay shiny, you must use the softer scrubbers - pink and blue, as the green ones will scratch. I did do a test, on a corner of the back and my green scrubbers did scratch, so I have pitched them so nobody accidentally scratches my beautiful pans ๐. I LOVE these pans. Even if you have great aluminum pans you love for baking cookies, you need a set of these. So back to update - I have had these almost a year, and still love them! They are as beautiful as when I first got them, and we use each one several times a week. I am slowly replacing many of my pans with the Hestan triply pan of that size and shape.

A far cry from traditional sheet pans. We all have some aluminum sheet pans in our kitchens. They are functional but ugly and prone to staining. Even scrubbing does not seem to remove staining. When wiped with a towel to dry, the towel becomes grey/black with aluminum oxides. I wonder how much of that aluminum oxide gets into our food and how healthy/unhealthy that might be. That said, the aluminum pans provide even heat and are fine for cooking baking. Most reviews say that full stainless sheet pans look good but heat unevenly. I wanted to try something that was a bit more visually appealing, yet still functional. The Hestan OvenBond products are triply. A top layer of stainless, a middle layer of aluminum, and a bottom layer of stainless. They claim to look great and heat evenly. I've tried them and here are my thoughts. They look great and are markedly heavier than traditional sheet pans. My cookie batches looked to heat quite evenly. I have had to lengthen my cooking time by a minute or two as they seem to take longer to come to temperature. And they take longer to cool down. I would recommend these pans but wish that they were less expensive. On the plus side, they look great and should be a lifetime purchase.
