The information states extendable to 4m. Is the total length of the pole 4m or are they including the users height in their measurements?

Shaft extends to 2.5m (Ryobi spec sheet) so the 4m assumes user is holding it 1.5m above ground. A little misleading I think.

How fast does the blade stop when you take your finger off the trigger?

It is not a blade, but a chain. As with most electric chainsaws, it stops almost immediately once you take your fingers off the trigger. The precise time depends on chain tension, but it is a matter of a couple of seconds at most.

how thick branches does saw cut eg cutting depth

The saw length is 20 cm, so it cannot cut anything with a diameter of greater than 20 cm. In practice, 15 cm (6 inches) is a practical maximum. I have used mine a lot - I have other One Plus tools - and it is a superb tool. To better it you would need to pay more than £500.

Can the saw attachment fit on the pole hedge trimmer and be bought seperatly

The whole assembly comes as one, the battery holder and on/off trigger is the bottom part, the top part is the motor and chainsaw part and then there is a third part which is an extension if you need it. The trigger/battery part and top can be used together without the 3rd part/extension. All 3 parts come as a set,you cannot buy individual parts.
