Question 1

I have a set of wusthof classic ikon(sharpening angle:14º) and some japanese ones(sharpening angle:15º)? can i use this to sharpen both types?

The 316 machine is designed for Japanese blades.  BUT I have also resharpened German knives on it.  It takes a while as you have to use the coarse wheel to change the angle of the German knife to the Japanese angle, and then use the fine wheel to finish the sharpening.   As I say takes some time but gera man knives do come out we'll.

Question 2

What is the difference between 2-stage and 3-stage? so for instance between this and chef's choice 15 trizor xv ? thanks

The first blade is a grinder, still quite fine and used for sharpening. The second is for honing, a fine grinder which produces a sharper blade. The third is a polishing stone, very fine and produces the shapes the blades, but to be honest I find the two stage system works fine and produces very sharp blades. In fact, when used with good quality Japanese blades, they are extremely sharp, to the point that my wife refuses to use the knives now, and the three stage really isn't necessary. The grinder itself, by the way, is extremely good, not only for my Japanese knives but Imhave also used it to convert and sharpen my Sabatier knives, and the result is excellent. A really good professional product and well worth the price. It is important however to keep you knives sharp and don't let them go blunt, but as long as you sharpen your knives every five or so uses, this really is excellent.

how do i decide between this two stage sharpener and the more expensive three stage sharpener? For Global knives.

I contacted the company that makes this product as I wasn't completely satisfied with the sharpening of my Global knives. They advise me the product was not suitable for Global knives. I quote: "With regards to your concern, Chef's Choice Diamond Hone Sharpener Knives Model 316 it not compatible when you sharpen the Global knife because model 16 is 15 degree edge only and Global knives has a 12-14 degree edge."
