How wide is the roll? I need about a metre and does 35gsm mean it's relatively translucent?

12 inches by 50 yards (0.304m x 45.72m). and yes it means its really thin like a tracing paper.

What is the texture of the paper like?

It's smooth. It feels similar to trace but it's much much thinner so it can crease. Quite similar to that thin paper used for baking.

How is the paper to draw with ink, is it the type to not sink into the paper?

It is ok for sketching. If you mean ink like pen, or similar, I would say it is fine. Otherwise, painting and etc it is not good
