Yes you want the meat kind of firm but not frozen solid. It will slice it frozen but I don't like it that way.

Go to the manufacturers website and get the manual from them. You don't really need a manual to use it, just need it to assemble it, which you can see on their video on Amazon. After you've assembled once or twice, you'll remember how to do it.
