Would it seal a pinhole in the kitchen sink?

Yes . Let it dry well before putting water near for best results but I’ve used it for sealing leaky fittings and it’s been perfect absolute god send

Will it stick pvc pipe just as well as pvc cement?

It sticks waste pipes but dont know if this is the type of pipe your speaking about

Would this stop a drip from the bottom of an isolating valve running down the copper pipe? To seal the connection between the two metals?

I have used this only where the low water pressure would encourage the gunk to enter the crack -of an external, concrete-lined water tank and it worked very well. I suspect it would do your job if there was no/ not much pressure behind the drip. I would shut off the supply , dry off the drip site and apply the gunk and wait before opening the flow ju to give it a chance -just to be sure.

Will it dry under the rain?

Dont really know about rain but we used it to seal shower and its A1,could you not cover it from rain to give it a chance to dry xxx
