If you like birch syrup, this is a good one
If you’ve only ever had grade A day, maple syrup, this is nothing like that. Shouldn’t need to be said, but…The taste is not that of molasses, but it’s closer to that, then grade A maple syrup.I drizzle it over blueberries from last summer and use it in an old-fashioned.

Amazing - does not taste like balsamic vinegar
The reviews comparing this to balsamic vinegar are a bit mystifying to me. While not on the super sweet end of the syrup spectrum, I would absolutely use this with breakfast food. I think it would pair really well with salty foods like pork (bacon) or something cooked with a lot of butter. Some reviewers suggested dumping this on ice cream which should be a red flag for anyone who doesn't like super sweet products. If you like corn syrup then maybe this will taste like vinegar to you, but if you lean more towards the savory, this will taste like a rich maple/birch syrup that you would classify as sweet.

potent and complex
It goes well with meat/fish/eggs, not pancakes. Just a little bit adds a lot of flavor, so the bottle is lasting me a long time. I might have bought the smaller size in hindsight. A little like balsamic vinegar, including the tartness. It has a little bit of sweetness like maple syrup, but that's not it's primary flavor.

All I can say is, “Wow!”
I use this on pancakes, waffles, baked ham, barbecue marinades, bacon and anything else I want to jazz up. I really like this with plain seltzer water over ice as a refreshing drink. This is 100% (organic) birch syrup at a great price. This is often difficult to find in health food stores and sells out fast on Amazon. Well worth any chef’s pantry and the best part is reading peoples’ uses here.

Great for basting smoked Salmon or Trout.
I have started to use birch syrup for basing while smoking salmon and trout, especially lake trout. This birch syrup is savory and slightly sweet, which is simply amazing with the smoked fish flavors. The best is with lake trout, which has a fat content that keeps the fish moist, flaky, and delicious.

Not maple syrup!
Some reviews suggest this is more like molasses and not sweet enough. This is a savory product, not something one pours on pancakes. I use it in savory sauces for foods like meat and poultry for an added umami zing. A little goes a long way. Highly recommended.
