Is this an early harvest oil? Early harvest means that the olive is squeezed as soon as possible after it is harvested.

Yes it is an early harvest and we crush our olive oils immediately after harvesting them from our Family Farms olive trees! That's why we have a very low acidity in our organic extra virgin olive oil. Thank you.

What is the harvest date for the 3 and 5 lt tin cans sold via amazon? is this oil first cold press? all harvest from morocco?

On front label clearly posted as "First Cold Press". The back cover label also clearly says "Southern Desert of Morocco". I just bought (May 2022) a 750mL with date of Harvest Oct 2021 Expiration date of Oct 2024. I have not bought the sizes you ask for. To get harvest dates for those I would have to buy those sizes.

Can you stir fry with this oil?

You can, but typically extra virgin oil is not used to fry... By heating it you remove the extra special parts in it. Typically best to fry with normal oil.
