Q: What is more durable coarse or fine patter?. I want to use the product for watersports grip handles.

Thanks for your questions. Both are the same durable. It depends on how much friction you want. Certainly, coarse is higher.

Q: is the adhesive waterproof if applied correctly before use in watersports?

No. It is not waterproof completely. But it is changeable if the old one is broken.

Q: If used on a painted window ledge, will it tear off the paint if/when removed?

If the paint is gloss or semi gloss and in good shape it may not. Flat paint will probably get damaged.

Q: Can you seal this with polyurethane? I want to cover the top of a table.

Greetings: I think the solvents in the polyurethane will soak through the cork and loosen the adhesive. If you want to experiment try some of the water based polyurethanes. They may work. Apply in thin coats letting it dry before re-applying. Good luck.
