Do these taps have a center hole/dimple on the square end?

Most taps 1/4" and larger have the hole. This is to accommodate a tap guide. On smaller taps, you can leave it in the handle which usually has this feature. Also, if your tap for whatever reason doesn't, chuck it up in your drill press. This is a good alternative to starting the tap straight. Moreover, if your chuck is large enough to accommodate it, you can chuck the tap handle. Hope this helps. Good luck. Stay safe.

What is the difference between a t/a tap set and a dwt set?

If you mean a tap and die set the difference is a tap makes threads in holes for bolts to screw into and a die makes threads on the outside such as a bolt.

I don't understand how the sizing works. what is the differance between 5/8" -11 & a 5/8" -18?

5/8" -11; means 11 threads per inch. And 5/8"-18 is 18 threads per inch. These are coarse threads & 1/4"-24, is 24 threads per inch having a finer thread.
