Where do you place the temperature probes in hydroponic gardens?

I have my heating mats sitting on a piece of 1 inch thick foam and I place hydroponic pans on top of the heating mats. I slide the temp probe between the pad and the pan. This is easy to do because most pans have grooves in the bottom.
