The WiiU version had full coop, I don't see why this one wouldn't. I just checked Nintendo's website and it seems to confirm this is a 1-2 player game.

Hi, Yes, this game has local co-op and it works perfectly. The game is brilliant fun although sometimes quite difficult, but they’ve added a new character into the Switch version with extra abilities which makes the game a lot easier if you choose to play as him.

Can this be played on nintendo switch oled

Yeah, the Nintendo Switch OLED has the same chipset, and internals in general than the second revision, the only difference would be the OLED screen. You can play any switch game released previously.
