This hasn't altered in 'style' for over 50 years. It is made up of liquid and solid cream. The density depends on how it is stored and what you do with it before using. If stored in the fridge is very thick (almost in the same as clotted cream in density) but if stored in a cupboard or well mixed before using it is slightly thicker than double cream.

All I know is it has half the fat of fresh cream

not liquid, very thick. I use it to fill cakes. really nice, makes lovely jam and cream sponge cake.

Is this available in Sainsburys and Waitrose?

Tesco usually stock it, next to the evap and the condensed, it's cheaper bought in bulk here though.
