Q: does it measure the temprature of the vessel in which food is being prepared

At some point it does however to get accurate temp the tip of the probe needs to be submerged or cover from all sides. It can read temp of the vessel but it takes a while. From Personal Experiment.

Q: Can it measue the temperature of air ?

I don't think so. It's made for a different purpose.
