Can i use this on leather? My seats are leather, i have a leather dashboard, leather armrest and theres leather on the doors

I would Say NO. The description says paintwork/painted surfaces. Mequiars do do leather cleaning products though.

It says Do not let self dry.. but what if you spray mist it on one surface then surely spots might splash elsewhere and stain if you don't notice?

To avoid this, spray it onto the cloth directly.

Can anyone recommend a product for gloss/shiny plastics for interior?

by what i remember of this meguiars product it did a good job up to the usual meguiars standard./.././ another good product i find is turtle wax black in a flash../...
