Makes amazing ginger beer
I usually use Young's super wine yeast for an English ginger beer recipe that should taste half way between the M&S fiery and normal ginger beers from the noughties. I never quite got it to work properly so tired this champagne yeast for the first time. It made a plant that was very clear and seemed almost dead. However, when heated in week 2 in a demi-john and then proved in week 3 it taste fantastic. The only annoying thing about it is that it's very heat sensitive so I had to get it up to about 22°C to 30°C. If my room got cold, it didn't die but became dormant. I left the demi-john a few feet from a stove and had it bubbling at 10 bubbles a minute, so it performs very well. The bottom line is, it gives a great clear taste, and I'll never go back to super wine yeast.

Yeast Arrived Alive!
Within 10 minutes the yeast started chewing through my honey wine. Great airlock activity.Ps. Don't worry, the neck is not clogged as of now. The fruit on top with the honeycomb is mushy and lets air through.

Fast, Reliable and Resilient
EC-1118 is one of the most in-demand wine yeasts for good reason. It has a high ABV tolerance (intended for champagnes but usable in all sorts of brews), its fermentation is usually very quick and aggressive, and I've found it to be quite resilient to mistakes that I've made as well.As always with these 5g bags, if you're making a smaller batch of a gallon/5 litres or less, you really don't need the entire packet. You can just use about half of it or less even and tape up the bag.

Great product
Great product. Only problems I had were from not following the instructions. Lots of brewing sources online said that proving the yeast is unnecessary, but that proved to be false. Maybe in warmer climates it's not an issue, but for me proving was necessary for it to start brewing

Great hardy yeast.
I'm new to homebrew but I made wine from shop bought kits and wasn't impressed with the results.I've used this yeast to make hard cider, got good feedback from the drinking guinea pigs (I dont drink).I have also used this to make plum wine (not from kit) and produced wines that given the time are perfectly clear, have good taste and yield a good abv.For a newbie such as myself I'd recommend this as a starting yeast to learn the basics of brewing as it will take a bit of punishment and keep fermenting.
