Perfect Pasta Substitute
I haven’t done keto diet in about 3 years. 3 years ago the keto noodles they had available tasted like gritty toothpaste. I found these and saw they had the most consistent review on amazon. I had to try them. For 14.99 I was skeptical, so I was gunna be quick to return it if it was gross. I followed the instructions on the box, but only cooked them 1/2 way as I was making a baked pasta then put them in the oven. I had taste tested one to see what the texture was like prior to putting it in the oven. It passed the test. My wife is a chef, and I gave her a bite of the noodles with sauce and a bite of regular noodles and she said there was barely a difference and she has a very refined pallet. Hands down 100% great. This is one of the only 5 star reviews I’ve given on amazon. Great product for low carb dieters and keto diet.

I really enjoy this pasta.
Let me explain what these noodles are.I have read the bad reviews here and most are not warranted. These are low calorie pasta with low NET carbs. Not low carbs, low NET carbs. This is not for people on a strict KETO diet. But if you count NET carbs only then you can have them. Still, the rule is 20 Net carbs a day (if you are strict) and these 2oz servings have 16. Not sure if that is worth it.That said... I am on low carb for years now. Low carb makes me stay NOT hungry and it keeps my glucose on a steady level. For somebody like me (low carb and low calories) this pasta is a gift. I have not had pasta in years and the Konjac noodles don't count. They will spike your BG but in my case not too much and you need to offset them with some protein. Remember EVERYBODY reacts differently. Your spike does not men other people spike. Always test yourself. The calorie count is almost half of normal pasta. That alone. And they fill you (at least me) up. They need to be cooked longer. That is the nature of the different ingredients. And for pasta lovers they will NOT win on a side by side taste test but for somebody like me, who had no pasta in years and can't even remember what pasta tastes like, its just fantastic. Also the price is decent (not compared to normal pasta) since there are 12oz in the box. Others have 8oz. One error I saw on the box. It says 18 servings of 2oz per container. The box only contains 6 (2oz) servings. I assume that is meant for the whole 3 boxes that come with the order but is confusing. But I can do MATH so it is fine.To summarize:Like normal pasta - NO but close.These have low NET carbs, not low carbsLow calorie, check your own blood Glucose reaction, then decide and enjoy some pasta that you otherwise can not have.

WOW!
This is the second low carb pasta I've tried and now it'll be my last, I am genuinely blown away by how good it is. The last one had a very odd textural feel to it, that I find hard to put into words, but it wasn't a good thing. If someone made this one for me, I would never have known it was low carb. The taste & texture are spot on, if you like your pasta on the softer side, give it at least 20 min of cooking time. I just reheated the leftovers and it's even better the second day, I will definitely be putting this on subscribe.

Terrifically toothsome lower carb pasta!
I am moderately impressed with Carbe Diem pasta. It has the shape and a much better mouth feel than shirataki, hearts of palm, and perhaps even edamame pasta alternatives, which makes it more appealing in the first place. But there are some significant differences between the Carbe Diem pasta, and other standard pastas. Price is the first thing...Carbe Diem is definitely more expensive than regular pasta, but, if I want to indulge in a pasta dish, I find the price completely acceptable. I can't seem to get the cooking time down yet, and while I cook Carbe Diem pasta in excess of 16 minutes, I find that it is still pretty chewy. Not a problem for me, but there it is. Lots of fiber with this pasta, which I personally find tends to produce a significant amount of bloating and gas. Again, this is pretty acceptable because, you know, PASTA, and I don't eat it very often! It also seems to me that the sauces with which I cover my pasta kind of go to the bottom of a plate, or bowl, thus requiring a good mix occasionally to incorporate everything. I found the Carbe Diem pasta very filling and satisfying with the chewiness an actual bonus, as it requires more mindful eating. I like it very much and plan to try the other varieties for different dishes.

Incredible
This pasta is a miracle. It takes a little longer to cook but that’s a small price to pay for low calorie pasta. The texture is a bit like chickpea pasta, but if you boil it closer to 17 minutes, it is less noticeable. The extra fiber makes this pasta more filling than others, which is great because I want something that’ll keep me full while being low calorie. I will buy this as long as they sell it. I hope that I will see this in stores sooner or later.

Delicious Lower Calories Satisfying Alternative to Regular Wheat Pasta
I rarely write reviews but I wanted to make sure to share how much we enjoy and love this pasta. I tried other high-protein lower carb pasta brands and threw it away after boiling because it was inedible. Carbe Diem is GREAT. It is so perfect for those on a calorie deficit because once cooked the pasta swells nicely and bulks up- it is very filling, and it tastes like regular pasta. We cook ours for about 15 minutes and the texture is very close to a regular pasta. It may be a tiny bit more "Al dente" with some resistance when biting into the pasta. It has a good flavor, like wheat pasta (no strong off-putting flavor like other brands I've tried.) Dry, before cooking, Carbe Diem has 110 calories for 2 oz where regular pasta has 200 calories uncooked for 2 oz. It also has more fiber than regular pasta. Once cooked it plumps up, increases bulk, and becomes very filling. This pasta offers so many opportunities to make delicious lower calories meals that are filling and satisfying. We stay stocked and I cook this pasta nearly daily. As a main dish with veggies and meat for one single adult I will cook two servings of pasta, 4 ounces, and that makes for a decent sized meal.

This pasta is delicious! Works with any sauce and holds its shape well. This Italian is so happy to enjoy pasta again without feeling stuffed and love that it’s lower carb and higher fiber. Perfetto!
