I have used many different brands of dried egg whites over the years and this is one of the best I have tried. The powder comes on a self-seal, strong, opaque plastic bag. Reconstitution instructions are printed clearly on the bag back. A measuring scoop is provided.The powder is economical in use. Ten grams makes up into the equivalent of two egg whites so it's easy to calculate how much you need. Once the water is added to the powder it disperses quite easily. I found it best to leave the mixture to stand for fifteen minutes after whisking, to ensure proper hydration.In a stand mixer or by rotary whisk, the mix beats up to a stiff meringue which holds its shape. The mixed egg white is equally good used as a binder in sausages. It's easier to clean the equipment if it's rinsed right away on cold water.I'm very satisfied with this product.
