The cut of beef is called a “Prime Rib Roast” which has nothing to do with the actual USDA grade of the beef, which happens to be USDA Choice. Our beef is raised, harvested, aged and packaged in small batches. You can find prime rib for less money, but they will not be the same quality regardless of the grade of beef, this is due mainly to our aging process.
