I would realistically say two - but it could be one if you’re a hearty eater. It’s very low calorie and low carb, so you don’t have to feel guilty if you make it one serving.

Q: Can you freeze after cooking it

Yes, I have frozen the lasagna and it is fine after defrosting. I make some extra sauce because, like regular pasta, some of the sauce gets absorbed. It is quite delicious and feels like I'm eating it fresh all over again.

Q: Does texture get gummy or slimey after it's cooked?

It's a fully cooked pasta that you mix in with your sauce of choice. Reminds me of al dente pasta. Very good.

Q: How long do you cook the lasagna

The "noodles" are already soft. Just assemble and cook the lasagna as you would normally with prepared pasta noodles...until your meats and cheeses are heated through and the cheese is melted and lightly browning.
