How do you you attach the between metal and wood with a rock boarder?

Why would you? This is a high temp gasket, if there is high temperatures involved you shouldn't be connecting it to wood. But to steel or cast iron one woul use liquid glass. It's a high temp glue for this purpose.

How compressible is this gasket material? The gap around my smoker door is not supper consistent. Can this compress some to allow for this variation

Superwool blanket is very compressible - it doesn't take much to compress it to 1/2 of it's height.

2 questions: can it bend 90deg, and can it be cut in half lengthwise??

you can fold it over, but not bend it 90 degrees like" L" shaped.. Yes you can cut it length wise with something real sharp "razor blade"
