Amazing Plastic Knife, Cuts Cheese Like It's Butter
I had this knife saved in my "save for later" cart for over a year. I was just sooooo skeptical of this knife. I hate wasting money on useless things and I was worried this knife would fall into that category. Well I got tired of slicing cold, hard cheddar cheese, extra sharp with regular knifes. My wrists would hurt and the palms of my hands would get sore.Well now that I've finally bought the darn thing and tried it, I regret not having done it sooner! It cuts in a straight line down, all I have to do is push a little. But once you start pushing down gently, it slices and feels as if you are slicing butter. It is still very surprising when I use it, I just can't get used to cutting cheese feeling so effortless.I tried cutting thin slices on my extra sharp cheddar (cold) and that also was very easy to do. I cut them so thin I made grilled cheese sandwiches on the pan and the cheese melted successfully in 2-3 minutes.This knife is not just for cheese, it works great on ice cream cakes too! Ice cream cakes are also on my "I don't like to cut" list and I tried this knife on it, it worked so well. It cut the cake clean and smooth. And straight. This knife is really just perfect, I can't praise it enough.Don't be skeptical like me and hesitate, just buy it and save yourself a lot of trouble slicing!

Length description controversy!!
While I really like these knives, and have had several, I ordered this product based on the description, wherein it says that the BLADE is 8" long. I needed the longer blade length for what I use mine for. I was, therefore, disappointed when I received the small knife, which has a blade of only 4". Upon looking back at this listing, (because I thought I must have misread something), I saw that it really does say 8" blade, but if you scroll farther down, it also says 8" ITEM. In this case, i received an 8" item, not a knife with an 8" blade. I kept the knife because I can use it for other things, but it does not work for what I intended to use it for. So I just wanted to post this, so that someone else doesn't end up with the same situation! That is why I only have it 4 stars. Otherwise, as far as how these knives work, I'm impressed. They're perfect for processed cheese. I personally used mine most for slicing cinnamon rolls, right before putting them into the pan. Cuts well, but didn't damage my counter.

It works beautifully
I bought this knife in 2017. Have at least 5 other cheese slicers. Cheese does not stick, it almost falls off. I’m not talking about sift cheese only, works well on NY sharp cheddar. Nothing works better.

good, but not stiff enough
For VERY soft cheeses, this knife is excellent. It does a good job of not sticking to the cheese as you cut down.However, I cut a lot of slightly stiffer soft cheeses, which distort heavily with a my other cheese knife (and of course with a standard knife as well...).This knife deflects side-to-side too much in these cheeses - eg it is tough to cut straight down through the block: the cutting edge wants to pop out toward the open face, and putting a little force (rotation) on the handle doesn't effectively counteract this tendency.To a lesser extent, the tip of the knife also wants to eject, eg the near the handle I'm cutting a 1/4" slice, but towards the tip the slice thickness decreases & decreases as I cut down.Why can't anyone make a perfect knife for this very specific need??? I do believe this knife would be perfect if it were metal or some sort of reinforced plastic.

best knife for extra sharp cheddar
I like to eat a lot of Tillamook Extra Sharp Cheddar, which is hard and not crumbly so it's difficult to cut. I prefer to buy the large sizes of it to save money but they're much harder to cut than the small sizes, even with my high quality metal knives. I came across this knife and it's great. Even though it's plastic, it's pretty sharp, but I think its value comes from how thin the edge is and the fact that it has those like tapered things on the side to help separate the slice from the block as you cut. I was worried that the plastic edge might get dull but so far so good. I'll see if I can add an update to this review later once I use it more.

What you are really getting
It was not the knife I thought it was supposed to be. I thought it was the bigger knife as it was more expensive. I don't like this little knife.
