Very flavorful and aromatic
I was hesitant of purchasing this. So far of all the different beans I've tried over the years the "Costa Rica SHB Ep Tarrazu La Pastora Coffee Beans (Light Roast (City)" had been my favorite but I still buy beans grown in different areas of the world just to see if there is something better. I was surprised by "Mexican Chiapas H/g E/p Fair Trade Organic Coffee Beans (Medium Roast (Full City +)". When I opened the bag the aroma of the beans is the best I've ever smelled, and while perking the aroma filled the house. When I opened the bag of beans the bag did rip open spilling some beans on the floor and while getting a zip lock bag to put the beans into I did step on and crushed a few beans under foot and the pleasant aroma of those beans still fill the house. After perking a pot I drank the first cup without creamer or sugar (usually I use a little bit of creamer and no sugar), the taste was flavorful, bold, smooth and not bitter. I always perk a 8 cup pot and save the extra for later for iced coffee and this made a really good iced coffee too. This may be my new favorite coffee beans. Next time I purchase them if the beans are consistent in flavor this will be my new favorite bean.

A new favorite
I home roast and have my go-to coffee beans, but experiment with a new origin on every-other order. This was the latest trial, and I love this Mexican Chiapas! Flavor profile is very similar to Ethiopian Sidamo/Yirgacheff, which are the favorites in my household. The beans are also small like the Ethiopians, and roast similarly. Lots of chaff. They taste the best as a medium (city) roast. Deep, complex flavors, and very clean. Cooked any longer and they still taste FINE, just end up boring and burnt-y like every other dark roast. However I do like to examine the Chiapas more closely, as there are a small number of defective beans in every batch. Maybe 1-per every two handfulls have partial insect damage, where there are virtually no defects from the Ethiopian organic fair trade equivalents. For now, while I'm minding costs in April 2020 the Mexican Chiapas will be the new replacement for the pricier Ethiopians.

Tasty!
Good coffee, good price, fast shipping and it roasts up nice but be careful when opening the package. Once I got through the Fed-X bag the beans went everywhere. Open it over a large bowl or pot. They need a better packaging system...

The best so far
I especially like this coffee. I've tried a number of organic fair trade coffees and I prefer this one over any others. The flavor is wonderful and I really appreciate the light roast as, in my opinion, most other companies waaaaay over roast their coffees. This leads to a harsh, burned flavor which makes it difficult to enjoy the subtleties of the beans. Plus light roast coffees in general contain more caffeine! If you've never tried a light roast, I encourage you to try this one.

Good deal for the price.
A verry mellow coffee with slightly chocolate overtones. A bit too bland for me so mixed it with a dark and more bitter roast. It turned out to be a very good blend.

Great flavor.
This coffee has a bold, robust taste. I use it as a blend with the El Salvador but it also is a fantastic stand alone coffee. It tastes great as a med-dark to dark roast. I haven't roasted as a light roast yet but we see how that goes in the future.

Did not taste fresh...
This did not taste fresh. My entire family loves Chipas coffee. The bag does not have a date code, but ultimately the grind and brew yielded a very acidic low quality coffee. We tried it with multiple grinds to see if the quality improved, it just didn't. We ended up tossing over 9 lbs as we just couldn't drink it. I hope I just got either a bad batch or one that was old because if this is the normal taste, that would not be good.

Repeat buyer - best for the money by far
third time ordering. Economical, uniform quality (good) and for organic, again, great price. Always roast up nice shorting the second crackles. I use a hot air corn popper and make espresso in a Rancilio unit. Always great crema and very smooth taste, no fail. May have to try some of the other regions but this one has been so good and I like to stick with what works.
