All in all, a big improvement over the plastic model
I've been using a white plastic model of this mandoline for over 20 years, and it was beginning to get stained from use. The stainless is much easier to clean, and improvements to the way the blade attaches have made slicing much more accurate and faster. The blades are also sharper than I ever remember the plastic model being, so slicing is effortless. As for the guard, I ditched it -- it's very cumbersome and would require so much pre-cutting of the vegetables to be sliced that it becomes pointless to use the mandoline -- so, I always use Kevlar kitchen gloves or equivalent. This cutter is so sharp that you will risk major injury without protective gloves. The plastic model had notches in the sides near the bottom to make cutting over a bowl easier -- this one doesn't. Finally, although the SS cleans up easily, there are plastic structural members that make it hard to clean the blade area. I've been using it almost every day since I got it, as it makes processing vegetables so much easier.

Excellent Product!
I had a Borner mandoline set that I bought 30 years ago. It's time to replace it with a new one! I loved everything about this product. Highly recommend!

Very nice mandoline. Would like greater width, and complete storage.
I am convinced I have a great mandoline! Sharp, easy to use, safe to operate. I like that the storage concept prevents accidental contact with the sharp blades. I love that this one looks nice too! Two other improvements could be made:1) I like that the mandoline parts bind together in the container for storage - but the hand shield should fit/attach in some way too! That is an essential component that should not be separated from the rest of the mandoline and blades!2) my second request might be above standard, but I would have liked a wider cutting surface. The very first thing I needed to slice was pineapple and the surface was not wide enough to slide the pineapple across. See, I was making these awesome pineapple flowers: You cut off the top, bottom, and skin/bark of the pineapple with a knife, and then without coring the pineapple, you cut 1/8" thin slices (this is where the mandoline would have been helpful, but it wasn't quite wide enough) - and then you bake the slices in the oven. After cooking, while still warm, you place the slices into muffin tins to curve the edges upward like petals. The result is incredible, beautiful, cupped flowers! Gorgeous! Anyway, it didn't work on the mandoline, but my knife skills sufficed. And the next day I used the mandoline for 6 batches of apple chips that turned out wonderfully, and were easy, so I am glad to have this mandoline.

Best Mandoline out there
Have been using Borner Madolines for a long time. The last one I bought for myself was over 15 years ago. It still works great, but the light color plastic has turned color over the years. This new one is a step up and works great. Only brand I would buy.

Replaced my original Borner V-Slicer
Bought the original over 25 years ago during an infomercial. So, when I decided to upgrade I started doing some research. And, after watching dozens of videos, and reading even more reviews of various makes and models, including some very expensive slicers, I decided on the Borner V6. Why ? Because it dices. It also slices tomatoes. If a $200 mandoline can't slice a tomato, I don't need to spend $200.These have come a long way. This one has a great safety feature. A plate that covers the blade when stored, but also can be used for medium slices.One negative, and it's a minor one. The directions don't show the best way to put everything back into the caddy. It took a while, but I figured it out.

Borner V^ Stainless Steel Mandoline V-Slicer
I would prefer different thickness options for slicing other than very thin or thin. My husband and I tried slicing various vegetables but still felt the slices were too thin even after switching blades. For $70+ I wouldn't recommend purchasing the Borner.

Best Purchase Ever
I bought this for my husband, and to say he loves it would be an understatement. Every time he uses it he thanks me for getting it for him. He offered to show me how to use it, but I declined. Why deprive him of the joy it brings him. Seriously, this is a great appliance.

These are great for making very thin french fries!
I bought this for my husband - as he loves to cook - and he's made some awesome potatoe chips and french fries using this.
