Great Product
It is amazing how different this smells and tastes from regular cinnamon. So mild and delicious. I bought this for health reasons and to help with insulin resistance.

So far, still true Ceylon…the difference between Ceylon and Cassia
This will be my third purchase. This review will change if they ever replace it with Cassia, Saigon or some blend. I will know. I am seeing reviews with some confusion on Ceylon v. Cassia. 1. If you are making spiced cider, baking, using it occasionally and need that pungent punch, taste and smell of strong cinnamon, purchase Cassia. 2. If purchasing for daily or multi-week use, consider Ceylon. Cassia used frequently has been shown to cause Kidney and Liver Damage due to high Coumarin levels. 3. Most of what you see at big name stores is Cassia (cheapest). If it doesn’t specify c. verum, it’s probably Cassia or Saigon or a blend. 4. Ceylon is native to and grown in Sri Lanka, not China. 5. Ceylon is much lighter in color, taste and aroma (sweet) than Cassia (dark, pungent). It’s not “old” or “stale” it’s Ceylon. 6. If purchasing sticks, Ceylon looks like a multi layered cigar rolled up and can be easily broken apart using your fingers. Cassia is a harder, darker, single layer. 7. Ceylon can clump in beverages because it’s a fiber (bark). If ground fine enough it should de-clump and may settle at the bottom, but most likely won’t “dissolve.” …and as always, hide your expensive Cassia from your klepto cousin.

Healthiest cinnamon to buy
This is healthier cinnamon than the Saigon cinnamon. I love the taste and will buy again.

I can't believe I spent this much on sawdust
I know that cinnamon IS tree bark, and I know most sold is from Cassia trees which are similar to real cinnamon, but this product has NO flavor,NO scent, and the texture of sawdust. If that's what you want to pay a lot of money for, have at it!!! Not me... This product is awful. Sorry
