I wouldn't hesitate to recommend this knife, I love it!
I absolutely love this knife. As a home cook, I’ve only ever really used cheap chefs knives, the kind of thing that comes as part of a knife and knife block set for £20-£30. For a long time I have been craving to try a better knife but wondering if it would be worth the cost, and it DEFINITELY is. I’ve been using it for about a month now and won’t be going back. Why I chose Dalstrong – I did quite a bit of research before buying. I’ve read more chef’s knife reviews than you would believe. I read repeatedly about Mercer and Dalstrong chefs’ knives being some of the best on the market under £50 but the handle of the Mercer just looks like a hard textured plastic which doesn’t look very premium and I imagine would be more difficult to clean. The Dalstrong, however, looked like it could really compete with the Mercer, but it has a beautiful wooden handle with full-length tang and 3 rivets. It really does have a premium look and feel. Sharpness – The knife did come beautifully sharp, but I honestly believe any knife can be sharpened to a high standard with a bit of effort. What’s more important is that the steel is hard enough to keep its sharp edge and the Dalstrong doesn’t disappoint. I give the knife a few strokes on a honing steel before every use, this might not be essential, but I think it’s good practice. With my old cheap knife, I’d have to sharpen the knife properly once a week as it would become so dull but I don’t feel I need to do this at all with the Dalstrong knife. Size and weight – My old cheap knife was a six inch but I apprehensively opted for the 8-inch dalstrong knife. I was worried it might be too big but I think it feels perfect, not too big at all. I do have a very large chopping board so maybe the 6-inch knife would be better suited to small boards. The weight is great too. If you balance the knife on your fingers alone it stays put, my old knife would tip forward as all the weight in the blade with very little in the handle. My fiancé thought I was mad paying nearly £50 for a single knife but now even she agrees it was well worth the money. It does seem like a lot of money for home cooks when you consider you can buy full knife sets for less but it really is worth it. If you have a decent chefs knife, you can do around 90% of your knife work with it. I cook almost daily, using a decent chefs knife just makes the whole process far more enjoyable. I really would urge anyone to try this knife, especially if like me you’ve been considering it for a while but not sure if you should take the plunge. I have never written a review on amazon, but i think this product deserves one. Overall consideration: This is a really well made knife, you can feel the care on details used for build it. I can compare this knife to more expensive German ones, even double the price, with no difficulty at all. Obviously if we go up on price this knife starts to present its limits, but if I have to compare the price of this product with its quality, this knife gets full marks. I think i will buy another of their products very soon to replace my old everyday knives Packaging and delivery. The packaging was perfectly made, the magnetic closing box and the sheath are a nice touch, the box itself is sturdy and very well made, good for putting away your knife and perfect for a present. A little card asks if you are satisfied with the product, otherwise invites you to contact the customer service. I find this particular care of details very important. Also the company sends you 2 e-mails, asking if the product was delivered in perfect conditions and if meets your requirements. In both cases it invites to contact the customer service if something goes wrong. 10 / 10 Knife construction The knife itself respects what the company professes. 55 rockwell steel with a perfect manufacturing, western style knife with typical western profile, perfect for chopping, cutting and everyday hard work in the kitchen. The steel has a good clear sound when "poked". The handle is very well designed , it feel really comfortable in your hand and becomes part of your arm in no time (i'm right hand), the point of balance of the knife is at the start of the handle giving the perfect balance for a "pinch grip". The spine is very smooth like any edge of the knife, this shows the care for detail during the production, even the rivets are smooth and the logo on the central one is a nice touch. 10 / 10 Edge The edge comes out from the box relatively sharp, not a razor level but in a scale to 10 I can say 7, where 10 is a razor edge. From what i can see is 18- 20 degree and very well polished. I tested the knife only for a couple of days for now, the sharp retention is good for this grade of hardness. In practical terms, with a daily use at home, dinner and lunch, you should use the steel rod every 3 or 4 days, if you are not as fussy as me maybe 1 week. PS i used this knife only for 10 or 12 times, i have a lot of experience but i can't say much more for now. I will improve this review when i take this blade on a sharpening stone to see how it behaves.

Overall great purchase and customer experience.
Overall very happy with The Dalstrong 8 Inch Chefs Knife. The presentation box is a nice touch and well made in itself. The blade sheath that comes with the knife is very handy for storing the knife in my drawer. The knife is well balanced, nicely weighted and has a nice and high heel which I really like as it gives your knuckles plenty of clearance on the chopping board. Out of the box it is very sharp and has so far kept that edge for the 3 weeks I've had it. The knife certainly has a quality look about it and the handle is nice and chunky. I also like the material the handle is made from. It does feel every bit the quality product. It was certainly a bargain at the discounted price. (£49.99) The only slight criticism I have is that the emblem stamped on the central rivet is way off centre and there is a slight blemish spot on the blade itself. (see images of a black dot). While these are only cosmetic in nature they would be certainly noticable to someone interested in knives, had I paid the full retail price for the knife I would likely be asking for a replacement from Dalstrong. This issue may highlight a potential quality control issue that needs addressing and reading some of the other comments on here some other people have had the same issue with the emblems on the central rivet. These two small gripes are the only reason I did not give five stars as otherwise its flawless. Overall I'm very happy with the purchase and I would certainly recommend Dalstrong and even purchase more knives from them in future.

UPDATE: This knife has withstood the test of time. I bought this knife in 2016 and it is still a daily workhorse in my kitchen. I only wish I had more Dalstrong knives. The Shogun series looks amazing. Would do anything to own a set but the knives are getting pricey - understandably so though. They are very well made. Stop looking. You can’t go wrong with Dalstrong! Hey look I made a rhyme! You’re welcome. The Dalstrong Gladiator chef knife cuts as good as it looks. If you are looking to upgrade your knife for a true kitchen workhorse, look no further.
