Mostly Fat
We order these quite often for work events and they are usually great. This most recent one that we ordered from this seller it was almost all fat. We didn't even have enough meat to do the event.

Not all it's cracked up to be! Do not reccomend.
I'm sorry but I had such high expecations for this ham. The rack had really bad instructions, the clamp for the top did not work. It was very difficult to assemble that one piece because it was not formed properly. I had to bend it to get the wing nut to thread but that caused the top to distort and then the part that was supposed to secure the ham would not thread in. I ended up getting a wooden wedge to hold the ham in place as I cut it. I took it to our family Thanksgiving, spent hours slicing, and nobody really liked it, especially me. In the end, about half way through slicing, I stopped cutting. 90% of what I had cut was left on the platter. The family decided that it might be ok to flavor pinto beans but not for eating. Don't waste your money. Consider that I am from East Tennessee and up in the mountains, we know how to salt cure, sugar cure, and smoke ham. 24 months of air curing and this price, is a waste of time, pork, and money.
