Q: Can the sensor be submerged beyond the metal portion in an acidic (pH 4.0) liquid?

I wouldn't, although pH 4.0 might work okay.

Q: Can this be used to Boil water as to brew beer ?

You could use it to boil water. You will need to position the temp probe so it is touching the water. I use mine to warm honey. It holds a range of 2 degrees f well.

Q: my electric smoker controller quit working, can i use this to power and control the heating element?

Temperature Control Range: -40~120℃, -40~248℉. I included the temperature range for this product. Two questions. How hot does your smoker get and are you sure the element is good. Most of the smokers I have looked at here go up to at least 275 F. Just as a reminder the temperature can be set to turn on and off in a specific range but it looks like your max temperature is going to be somewhere around 248 degrees F.

Q: how do I change to heat mode ?

You have to set the stop temperature higher than the set temperature and then it will go into the heat mode.
