It runs all the time. And it’s loud.

No. Like most 70v amps, it can only output mono.

Q: Anyone able to manage multiple zones with in wall knob amps?

Sure, why don't you crank each zone up and install in-wall volume controls to match the speaker settings re: 70 volt, 8 ohm, etc..
