Measurement of space in between the rollers?

4 1/2 inches between the rollers.

Not sure as I threw the packaging away, however it seems to be decent quality, light weight and smooth. I use it for working with clay.

What kind of oil or shortening is best to "season" the roller. Season it every use or just one time?

I seasoned mine with olive oil. I sanded mine first as it had a rough spot, then I washed it and let it dry for 2 days. After it was dry I oiled it. I haven't had to oil it again.
