Most likely it is the sugar that exists in the tomatoes themselves. Most of the calories from tomatoes would come from simple carbohydrates i.e. "Sugar(s)."

If you open it, you MUST refrigerate any unused portion IMMEDIATELY. Thereafter, I personally would not keep nor use it after it has been opened and refrigerated after three days.
